There is an interesting science behind the genetics of SAHIWAL A2 Milk. A2 milk harkens back to the way milk was before natural & human intervention caused cows to develop A1 proteins in their milk. All other mammals produce a2 milk, including humans, which means A2 milk offers a closer experience to drinking the milk that humans are supposed to have. The difference between the milk protein in a1 and a2 milk is only one amino acid – but this little difference impacts how our bodies digest the milk. Research shows that a large number of people who think they are lactose intolerant are actually a1 intolerant and can thus drink a2 milk and not experience adverse health issues.

THE SCIENCE BEHIND A2 MILK
BY DEFINITION | A2 is cow’s milk that contains only the A2 type of beta-casein protein rather than the more common A1 protein found in regular milk. It is characterized by a distinct golden colour.
All proteins are long chains of amino acid. Beta casein is a chain 229 amino acids in length. Cows who produce this protein in their milk with a proline at number 67 are called A2 cows, and are older breeds of cows like SAHIWAL,RATHI,THARPARKAR.
But some 5,000 years ago, a mutation-both natural & due to human intervention-occurred in this proline amino acid and began converting it to histidine. Cows that have this mutated beta-casein are called A1 cows, and include breeds like HOLSTEIN,JERSEY

Sahiwal is a breed of ‘Zebu cattle’ and is considered to be one of the best milch cattle breed in India. It is the most promising breed that produces highest quantity and quality of milk followed by the very similar Red Sindhi and GIR breed.

The milk of Sahiwal contains 5-6% fat whereas other breeds have only 3% fat. Sahiwal’s milk has 3 types of protein - alpha, Beta and Globin. Beta protein has A1 and A2 allele. Only Sahiwal breed contained the allele A2 which contained proline instead of histidine protein found in milk of other breeds. Due to the presence of this additional allele Sahiwal’s milk acts as a boon to humanity which is helpful in curing several diseases like cholesterol, diabetes and heart problems. And this is why Sahiwal is considered an important cow breed.
